Ingredients

Tender tofu (peeled, trimmed, thinly sliced and chopped, blanched in hot water to remove beany flavor) 500 g
Rehydrated shiitake mushrooms (cut into small dice) 10 g
Mushrooms (cut into small dice) 10 g
Pine nuts (kernels, cut into small dice) 10 g
Cooked ham (cut into small dice) 10 g
Cooked chicken breast (cut into small dice) 10 g
Shrimp (shelled, briefly cooked in hot oil) 40 g
Salt to taste
Cooking wine (for cooking the shrimp) to taste
Stock to taste
Cornstarch (for thickening) to taste
Oil to taste

Instructions

1

Prepare the tofu

Peel and trim the tender tofu, slice it into thin pieces, then chop it into small bits. Place in a bowl and blanch in hot water to remove the beany flavor.

2

Dice the supporting ingredients

Cut the shiitake mushrooms, mushrooms, pine nuts, and cooked ham into small dice and set aside.

3

Cook the soup

Place a pot over the heat, pour in the stock, and add the diced shiitake, mushrooms, pine nuts, ham, chicken, and other ingredients. Stir constantly with a ladle and season to taste. When the mixture comes to a rolling boil, thicken with a cornstarch slurry, drizzle in a little oil, let it boil through, then remove from the heat.

4

Stir-fry the shrimp

Heat a separate pan with oil, briefly cook the shrimp in the hot oil, splash with cooking wine to season, then add the shrimp to the tofu soup. Serve immediately.
