Instructions
Step 1
Use one jin (about 500 g) of whole middle-cut pork shoulder—just enough for one pan. You can tell the pork vendor that you're buying it for pork chops and they'll cut the right part for you! Marinate the pork chops with light soy sauce and oyster sauce. Finely chop the scallions, add half a spoonful of salt and 2 spoonfuls of peanut oil, mix well, and set aside.
Step 2
After marinating for 30 minutes, start pan-frying the pork chops.
Step 3
Fry until both sides are golden brown!
Step 4
Remove and cut into pieces.
Step 5
Arrange the cut meat back into the pan, spread the prepared salt-scallion mixture over the top of the meat, and fry over medium-low heat. Add a splash of dark soy sauce during cooking for color. Continue frying until the meat is cooked through and the scallion oil is released! Pairs amazingly with rice!
Step 6
Be sure to choose pork shoulder—it has a crisp and tender texture and holds up well to frying!! Don't add any extra salt; the soy sauce from marinating combined with the salt-scallion sauce is already flavorful enough!
