Ingredients

fresh rice sheets (or 7 ounces large dried rice sticks) 1 pound
pork shoulder (chicken, beef, and shrimp work as well) 8 ounces
Chinese broccoli 8 ounces
Boiling water (for soaking noodles)
vegetable oil (plus more as needed) ¼ cup
garlic (minced (1 tablespoon)) 3 cloves
fish sauce (divided, plus more for serving) 1½ tablespoons
eggs 2
sweet soy sauce (see page 24) 2 tablespoons
oyster sauce 1 tablespoon
sugar 1 tablespoon
distilled white vinegar (plus more for serving) 1½ tablespoons
Ground white pepper
Crushed dried red chilies (for serving)

Prepare the Rice Noodles

Cut the fresh rice sheets into 2-inch wide strips and separate. (If using dried rice noodles, soak in hot water for 6-8 minutes. They should be soft and pliable but not falling apart. Pour into a colander, rinse under cold water, and drain.) Set aside.
