One carp.

Scallions, ginger, garlic, and seasonings.

After the carp is cleaned and gutted, drain the water, make a diagonal cut every 2.5 cm on both sides of the fish (first cut 1 cm deep vertically, then cut 2 cm deep horizontally).

Marinate briefly with white pepper, light soy sauce, and a small amount of salt.

Mix light soy sauce, sugar, vinegar, cooking wine, tomato paste, and water to make sweet and sour sauce, set aside for later use.

Mix starch and flour into a batter, then coat the marinated fish evenly with the batter.

Heat the oil to 70% heat, lift the fish by the tail, and first deep-fry the fish head briefly.
