Sweet and Sour Celtuce
A sweet-and-sour, crisp and tender Zhejiang-style dish featuring celtuce batons marinated in a sugar-and-vinegar dressing.
Ingredients
Celtuce (peeled, strings removed, washed, and cut into 3.5 cm long strips)
1000 g
White sugar
100 g
Rice vinegar
50 g
Refined salt
5 g

Step 1
Peel the celtuce, remove the tough strings, wash, and cut into 3.5 cm long strips. Mix evenly with salt and marinate for 1 hour, then drain off the liquid and pat dry thoroughly with a clean cloth.

Pour the white sugar into a small aluminum pot, add a small amount of boiling water to dissolve the sugar, then place over the heat and simmer the syrup. Add the rice vinegar, remove from heat, and let cool completely.

Toss the celtuce strips evenly with the cooled sweet-and-sour syrup and marinate for 2 hours before serving.
