Sweet and Sour Pork Ribs
This Zhejiang dish features pork ribs that are first fried, then braised in a sweet-and-sour sauce. It has a sweet-sour flavor profile and can be enjoyed either cold or hot.

soy sauce
to taste
white sugar
to taste
red vinegar
to taste
scallions (cut into sections)

ginger (cut into sections)

Cut the pork ribs into sections.

Cut the scallions and ginger into sections separately.

Heat a wok over the stove, add vegetable oil and heat until hot. Add the pork ribs and fry until golden brown, then remove and drain excess oil. Leave a small amount of oil in the wok, add scallions, ginger, soy sauce, and white sugar, pour in water, add the fried ribs, cover and simmer until the ribs are tender and the sauce is almost reduced. Add red vinegar, toss to coat, then serve on a plate.
