Sweet and Sour Yellow Croaker
Yellow croaker is a high-quality sea fish with few bones, generous flesh, and a fresh, delicate flavor. This sweet and sour preparation delivers perfectly balanced notes and tastes excellent.

Step 1
First, scale the yellow croaker, then remove the innards and gills, and wash it clean.
Step 2
Use a knife to make several diagonal cuts on the back of the fish, on both sides, to help the flavors penetrate. Then marinate the fish with a small amount of cooking wine, scallion segments, and ginger slices for about 30 minutes to remove the fishy smell.
Step 3
Crack the egg into a bowl, preferably a slightly larger one to fit the fish. After beating the egg, place the whole fish into the egg wash and coat it completely.

Then roll the egg-coated fish in cornstarch until it is fully covered, and shake off any excess cornstarch.

Heat an appropriate amount of oil in a flat pan, and once hot, place the yellow croaker in to fry. Be sure to cook over medium-low heat slowly.

Don't rush to flip the fish—wait until one side is fully cooked before turning it over, otherwise the skin may tear and won't look as nice. Once both sides are golden brown, remove and place on a plate.
Step 7
Add an appropriate amount of oil to the flat pan, and once hot, add minced scallion and ginger shreds to release their fragrance.

Then pour in the tomato sauce and stir-fry until fragrant.

Add an appropriate amount of water, sugar, and salt, and bring to a boil. The water should be enough to just cover the bottom of the pan—no need for too much.
Step 10
Place the fried yellow croaker into the pan, cover with a lid, and let it simmer for a while.
Step 11
Flip the yellow croaker over, or you can spoon the sauce over the fish to coat both sides for better flavor. Once the sauce has almost reduced, it is ready to serve.
