Blanch the ribs
Bring a pot of water to boil. Add the pork ribs and blanch for 3-4 minutes to remove impurities. Drain and rinse under cold running water. This step ensures a clear broth.
Prepare the vegetables
Cut the corn into 2-inch sections. Peel and cut the carrot into 1-inch pieces. Tie the green onions into a simple knot to make them easy to remove later.
Pressure cook
Add the blanched ribs, corn, carrot, ginger, and green onion knot to the pressure cooker. Pour in 6-8 cups of water. Close the lid and set to soup setting (or high pressure for 30 minutes).
Season and serve
Once the pressure has released naturally, open the lid. Remove the ginger and green onion knot. Season with salt to taste. Ladle into bowls and garnish with chopped green onions if desired.
