This salad is perfect for hot days when you want something light yet full of flavor. The creamy sesame dressing clings to the leaves, while a splash of chili oil adds a gentle kick.

Ingredients

lettuce (Romaine or butter lettuce) 1 medium head (about 200 g)
sesame paste (or tahini) 2 Tbsp
chili oil 1 Tbsp
sesame oil 1 tsp
soy sauce (or tamari) 1 Tbsp
rice vinegar 1 tsp
sugar ½ tsp
salt a pinch
toasted sesame seeds (optional) 1 tsp
thinly sliced scallion (optional) 1 stalk

Prep the lettuce

Rinse the lettuce under cold running water, shake off excess moisture, and pat dry with a clean towel. Tear or chop the leaves into bite‑size pieces and place them in a large salad bowl.

Make the sesame dressing

In a small bowl, whisk together sesame paste, soy sauce, rice vinegar, sugar, chili oil, sesame oil, and a pinch of salt until the mixture is smooth and creamy. If the dressing is too thick, thin it with a teaspoon of warm water.

Toss and serve

Pour the sesame dressing over the lettuce and toss gently to coat every leaf. Sprinkle with toasted sesame seeds and sliced scallion if desired. Serve immediately as a side or light appetizer.
