Cut the sweet potato into pieces and roast in the oven until cooked;

After cooling slightly, place in a plastic bag and roll into a puree with a rolling pin;

Put the sweet potato puree, fine sugar, and butter into a small pot;

Turn on low heat to melt the fine sugar and butter, and stir-fry the sweet potato puree until dry;

Turn off the heat and let cool slightly, then add one egg yolk and mix well;
