Raisin Scones
These raisin scones are a type of English quick bread that can be ready in about an hour. Made with raisins and heavy cream, they are crisp on the outside, soft on the inside, and have a delicate sweetness and rich milky flavor.

Soak the raisins in hot water in advance, then pat dry with kitchen paper towels

Cut the butter into small pieces and soften at room temperature

Mix the flour, baking powder, and salt, then sift once

Add the butter and sugar

Rub with hands until it resembles coarse cornmeal

Add the egg mixture and heavy cream

Cut and mix with a spatula, then add the raisins

Press into a dough with hands; do not knead, remember

Roll the dough into a 6-inch disc with a rolling pin, then cut into 6 equal portions with a dough cutter

Place on a non-stick baking sheet and brush with egg mixture

Preheat the Dongling K40C oven to 180°C top and bottom heat, place the baking sheet on the middle-lower rack, and bake for about 20 minutes.
