Step 1
Wash the chicken bone forks and drain, add appropriate salt, cooking wine, and ginger, marinate for 30 minutes to remove fishy smell and absorb flavor. Then remove the ginger slices, pour out excess water, and set aside.
Step 2
Add more vegetable oil to the pot, add the chicken frames when the oil is 60% hot and fry.
Step 3
Fry until golden yellow, remove and set aside.
Step 4
Wait for the oil in the pot to heat up again, when the oil is 70% hot, pour all the chicken bone forks into the pot for a second deep-frying.
Step 5
Remove all the chicken bone forks and drain the oil, then set aside.
Step 6
Leave a little base oil in the pot, add appropriate cumin and dried chili peppers, stir-fry over low heat until fragrant.
Step 7
Add the fried chicken bone forks.
Step 8
Add appropriate pepper powder, cumin powder, and chili powder (add more if you like spicy, I added less); if it tastes bland at this step, you can add some salt. Stir-fry evenly and it is ready.
