Soak the rice
Rinse the glutinous rice under cold water until the water runs clear. Transfer to a bowl and cover with plenty of water. Let soak for at least 2 hours or overnight in the refrigerator.
Steam until tender
Drain the soaked rice well. Line a steamer basket with clean cheesecloth or a cotton kitchen towel. Spread the rice in an even layer. Steam over high heat for 30 minutes until the grains are translucent and fully cooked through.
Prepare the fruits and finish the rice
While the rice steams, chop your dried fruits into small pieces. When the rice is done, let it cool for about 5 minutes until handling is comfortable. Add the sugar and vegetable oil, then fold gently until evenly distributed.
Shape the cakes
Lightly oil your hands or a mold. Press a small handful of rice flat in your palm. Place a few pieces of dried fruit in the center, then fold the rice around to enclose them. Roll gently into a ball or press into the mold. Repeat with remaining rice and fruit.
Serve
Enjoy these warm or at room temperature. They can be served immediately or chilled in the refrigerator for up to 2 days. A light dusting of cornstarch prevents sticking if storing.
