Swiss Potato Squares

Swiss Potato Squares

Ingredients

russet potatoes (peeled and cubed) 8 medium (about 3 pounds)
butter (melted) 1/3 cup
fresh parsley (minced) 1 tbsp
salt 1-1/2 tsp
pepper 1/4 tsp
Swiss cheese (cubed) 1-1/2 cups
fully cooked ham (cubed) 1 cup
onion (grated) 1 small
garlic powder 1 tsp
eggs 3
milk 1/2 cup
Paprika

Instructions

Prepare potatoes

Place the potatoes in a saucepan and add enough water to cover them. Cover and bring to a boil; boil for 20-25 minutes until very tender. Drain the water, then mash the potatoes with butter, parsley, salt, and pepper.

Assemble base

Spread approximately 4 cups of the potato mixture over the bottom and sides of a greased 8-inch square baking dish to form a potato shell.

Add filling

Mix the Swiss cheese, ham, onion, and garlic powder together; scoop the mixture into the potato shell. Whisk the eggs and milk, then pour the mixture over the filling. Top with the remaining potato mixture, then sprinkle with paprika.

Bake

Bake uncovered at 400°F for 45-50 minutes until golden brown. Let rest for 5 minutes before cutting.
