Ingredients

chicken leg 1.5 kg
fresh mushrooms 100 g
goji berries 25 g
ham 100 g
chicken broth 750 g
cooking wine 100 g
soy sauce 50 g
ground pepper 10 g
fine salt 25 g
rock sugar 25 g
MSG 10 g
scallion 50 g
ginger 50 g

Ingredient Preparation

Debone and wash the chicken legs, then cut them into 4 cm long by 2 cm wide pieces and set aside. Soak the fresh mushrooms in warm water for 10 minutes, rinse clean, and cut them into 4 cm long by 1 cm wide slices and set aside.

Frying and Braising

When the oil in the pan reaches about 70% hot (roughly 180 °C), add the chicken pieces and fry them. Drain off the oil, then add the cooking wine, soy sauce, fine salt, rock sugar, MSG, and chicken broth. Once the sauce has reduced and thickened, remove the chicken pieces.

Jar-Braised Stewing

Place the chicken pieces into an earthenware pot, add the goji berries, fresh mushrooms, ham slices, and chicken broth, then seal the opening of the pot with paper. Transfer to low heat and stew for 2 hours. Remove the seal paper and serve.
