Tejas de coco

Named for their shape, which resembles Mediterranean-style roof tiles, these are crisp coconut wafers.

Ingredients

egg whites 3 small
shredded coconut 80 g
granulated sugar 100 g
flour 20 g
melted and cooled butter 70 g

Instructions

Step 1

Preheat oven to 190°C. Grease two baking sheets with melted butter, then set aside to cool.

Gently beat egg whites with a fork. Add shredded coconut, granulated sugar, flour, and butter, stir until well combined.

Step 3

Shape the mixture into wafers using the method described in 'Chef Tips' (page 63). Bake one sheet at a time for about 5 minutes until lightly golden. Repeat with the remaining batter, re-greasing the baking sheet each time.
