Teochew Braised Chicken Mid-Joint Wings

Ingredients

Chicken mid-joint wings (washed clean, pin feathers removed) to taste
Teochew braising liquid (pre-boiled) to taste

Instructions

1

Prepare the chicken mid-joint wings

Wash the chicken mid-joint wings clean, remove any pin feathers, then soak them in cold water for about 30 minutes to draw out the blood. Lift them out and drain.

2

Braise the chicken mid-joint wings

Bring the braising liquid to a boil, add the chicken mid-joint wings, cover the pot with its lid, and simmer over low heat for 20 minutes. Turn off the heat and let the wings steep in the broth for another 20 minutes, then lift them out and serve.
