Ingredients

Chicken thighs or wings 500g
Vegetable oil 1/2 cup
Thai BBQ marinade powder (Kai Yang) 1 packet
Lemongrass stalk 1, bruised
Garlic cloves 3, minced
Fish sauce 1 tbsp
Coriander for garnish

Prepare the Marinade

In a large bowl, combine the vegetable oil, Thai BBQ marinade powder, minced garlic, and fish sauce. Stir well until the mixture forms a smooth paste.

Marinate the Chicken

Add the chicken pieces to the bowl, tossing them thoroughly to ensure they are evenly coated with the marinade. Add the bruised lemongrass stalk to the bowl. Cover and refrigerate for at least 30 minutes to an hour to allow the flavors to penetrate the meat.

Grill the Chicken

Preheat your grill to medium-high heat. Remove the chicken from the marinade, shaking off any excess. Grill the chicken for about 20-25 minutes, turning occasionally, until the skin is crispy and charred, and the meat is cooked through.

Serve and Garnish

Transfer the grilled chicken to a serving platter. Discard the lemongrass stalk. Garnish generously with fresh coriander leaves and serve immediately with sticky rice or a dipping sauce.
