Story

This recipe is perfect for a lazy yet satisfying meal. After marinating the pork for a few hours, it cooks gently in the pan, requiring minimal effort. The result is tender, aromatic slices with a delicious char siu and cumin flavor.

Ingredients

Pork tenderloin 2 strips
Ginger slices a few slices
Char siu sauce 3 tbsp
Cooking wine 1 tbsp
Starch 1 tbsp
Salt a small pinch
Cumin to taste

Instructions

Step 1

Remove the pork slices from the water and roughly squeeze out the moisture. Add ginger slices, 2-3 tablespoons of char siu sauce, 1 tablespoon of cooking wine, and 1 tablespoon of starch; mix well, mix, mix, mix, mix, mix... Once mixed, cover with plastic wrap and refrigerate for at least 2 hours; I usually marinate for half a day.

Heat the wok and oil, add a small pinch of salt to the oil, use slightly more oil (do not discard the oil after frying, use it to stir-fry other dishes), pour in all the marinated pork loin slices, spread them out, cover the wok, switch to medium-low heat, and pan-fry for 5-6 minutes.

Flip the pork slices, spread them out, cover the wok, and pan-fry over medium heat for 5 minutes.

Finally, stir-fry evenly over high heat, remove from the wok and sprinkle with cumin (*leave the oil in the bottom of the wok, do not pour it out), it is really fragrant.
