Story

Coated in flour, egg white, and breadcrumbs, the fish fillets turn golden and crunchy after a double fry. Served hot, they offer a satisfying contrast between the crisp shell and the moist, mild fish within.

Ingredients

Pangasius 500g
Salt 1 tbsp
Black pepper a little
Cooking wine 2 tbsp
Egg white half an egg's worth
All-purpose flour appropriate amount
Breadcrumbs appropriate amount
Five-spice fried chicken powder appropriate amount

Instructions

Step 1

Wash the basa fish, gently squeeze out the water, and cut into blocks of suitable length and size; if you prefer a thinner texture, you can slice the thick parts horizontally.

Take a small deep pot, pour in plenty of oil, and heat until dense bubbles appear, then switch to low heat.

If you are not lazy, fry everything once and then fry it again in oil; it will be crispier after the second frying.
