Ingredients

Live sandworms (cleaned) 250g
Green and red bell peppers 2 pieces each (approximately 100g)
Minced garlic 2g
Shredded ginger 1g
Shredded scallion 1g
Sesame oil 2g
Ground white pepper 1g
Thickening sauce 30g
wet starch 10g
raw oil 1000g (50g actual consumption)
refined salt 10g
MSG 10g
cooking wine 20g
green pepper

Instructions

Step 1

Mix thickening broth, sesame oil, white pepper, and wet cornstarch into a bowl sauce (white sauce). Trim the sea worms to uniform length. Cut the red and green chili peppers into thick strips the same length as the sea worms.

Heat oil in a wok over medium heat until 70% hot. Pass the sea worms through the oil until 70% cooked, then pour out and drain the oil. Reheat the wok, add the red and green chili strips, stir-fry until 50% cooked, then remove.

Heat the wok and add oil. Add the aromatics, then pour in the sea worms and chili strips. Splash wine along the wok and stir-fry. Add the bowl sauce and stir until evenly coated. Drizzle in finishing oil, plate, and serve.
