Milk cake (sliced, then cut into 1.3 cm diamond-shaped cubes) 300 g
Cured ham (sliced, then cut into 1.3 cm diamond-shaped cubes) 50 g
Cooked chicken (sliced, then cut into 1.3 cm diamond-shaped cubes) 50 g
Soaked shiitake mushrooms (large ones cut smaller) 50 g
Pea shoots (washed) 50 g
Fine salt 10 g
MSG 1 g
Ground pepper 2 g
Broad bean starch slurry (for clear thickening) 20 g
Superior stock 700 g
Sesame oil 5 g

Ingredient Preparation

Slice the milk cake, cured ham, and cooked chicken into slices, then cut them into 1.3 cm diamond-shaped cubes. Wash the pea shoots. Cut large soaked shiitake mushrooms into smaller pieces.

Braising and Finishing

Place a wok over high heat, pour in the superior stock, then add the soaked shiitake mushrooms, milk cake, cured ham, cooked chicken slices, and fine salt. Bring to a boil, skim off any surface foam, and simmer for approximately 2 minutes. Add MSG and ground pepper to adjust the seasoning. Thicken with the broad bean starch slurry to a clear consistency. Add the pea shoots just before serving, drizzle with sesame oil, and the dish is ready.
