Instructions
Make the cheese cream
Place the cream cheese in a heatproof container, cover with plastic wrap, and microwave for about 30 seconds. Transfer to a stainless steel bowl and beat with a whisk until smooth, then add the granulated sugar and mix until silky. Add the beaten egg yolk, milk, and rum one at a time, mixing well after each addition.
Whip the heavy cream
Pour the heavy cream into another stainless steel bowl set over an ice bath, and whip with an electric mixer to 70–80% stiff peaks.
Combine the cheese cream
Slowly fold the cheese cream into the whipped cream mixture using a rubber spatula.
Make the meringue
In another bowl, beat the egg whites with the salt and 1/3 of the granulated sugar. Once foamy, gradually add the remaining sugar and continue whipping to stiff peaks. Fold 1/3 of the meringue into the cheese mixture using a rubber spatula, scraping from the bottom. Once combined, fold in the remaining meringue with a cutting motion. Be careful not to deflate the meringue.
Soak the ladyfingers
Reserve 6 ladyfingers for decoration. Cut the remaining ladyfingers into 4 pieces each and arrange them in a shallow dish. Brush all the ladyfingers generously with the coffee syrup.
Assemble and chill
Spoon the cheese cream into 6 glass cups (about 300 ml each). Sprinkle with coffee powder, then add a layer of ladyfingers and coffee beans. Repeat with another layer, finishing with a layer of cheese cream on top. Cover with plastic wrap and refrigerate for about 3–4 hours. Before serving, decorate with coffee powder, coffee beans, and ladyfingers.
