Tomato and Egg Noodles
A Chinese recipe for tomato and egg noodles made with round dried wheat noodles, eggs, tomatoes, and chopped scallions.

Prepare the ingredients as shown in the picture.

Place the noodles in a pot of boiling water and cook for about six minutes, adding cold water once in the middle.

Then remove and rinse with cold water, and place in a bowl.

Plug in the electric cooker, add oil, crack in the egg and fry.
Step 5
Fry both sides, then remove and set aside.
Step 6
There is still some oil left in the pan, so no need to add more. Dice the tomato (forgot to take a photo), add it to the pan with a pinch of salt and stir-fry until juicy, then add an appropriate amount of boiling water and bring to a boil.

Simmer for about two minutes, add a little dried shrimp powder to enhance the flavor, and the broth is ready.

Place the fried egg in the noodle bowl, along with two slices of tomato.
Step 9
Pour the broth into the noodle bowl, garnish with some chopped green onion, and drizzle in a few drops of sesame oil. The flavor is amazing—doesn't it look appetizing?
