Tomato-Braised Prawns

Ingredients

Prawns (washed, boiled, shelled, deveined, and cut into sections) 750 g
Onions (washed and finely chopped) 125 g
Celery (washed and finely chopped) 50 g
Green bell pepper (washed and finely chopped) 75 g
Tomatoes (washed and finely chopped) 750 g
Cooking oil 75 g
Garlic cloves (washed and finely chopped) 15 g
Dried chili peppers (washed and cut into sections) 5 g
Salt to taste
Ground white pepper (crushed) 6
Broth to taste

Ingredient Preparation

Wash the prawns, boil them, then shell, devein, and cut into sections. Wash and finely chop the onions, celery, green bell pepper, tomatoes, and garlic cloves. Crush the peppercorns. Wash and cut the dried chili peppers into sections. Set everything aside.

Sautéing and Braising

Heat the wok and pour in the cooking oil. When the oil is about 60% hot, add the onions and chopped garlic and sauté until lightly golden. Add the celery, green bell pepper, and tomatoes and stir-fry until they are about half-cooked. Add the crushed pepper and dried chili peppers and stir-fry until fragrant. Pour in an appropriate amount of broth and bring to a boil. Season with salt to taste, add the prawn sections, and simmer gently over low heat for several minutes before serving.
