Tomato Sauce Pork Chops

A Fujian-style tomato pork chop dish: pork chops are marinated, coated in batter, and deep-fried until golden.

Tomato Sauce Pork Chops

Ingredients

pork chops 500 g
Shaoxing wine 10 g
Sichuan pepper salt 10 g
soy sauce 20 g
MSG 1 g
dry starch 15 g
egg 1
lard 1000 g
tomato sauce to taste

Instructions

Prepare the pork chops

Cut the pork chops into 15 cm wide strips of even thickness, making sure each strip carries a piece of bone.

Marinate and coat

Place the pork bone strips in a bowl, add the Shaoxing wine, soy sauce, MSG, dry starch, and beaten egg, and knead everything together evenly by hand.

Deep-fry

Heat a wok over high heat and pour in the oil. Bring it up to about 80 percent hot, then drop in the pork bones, spreading them out in all directions so they do not stick together. Once all the pieces are in, use a slotted spoon to turn them and fry until they turn golden brown and float to the surface.
