Qingming Guo is a customary food eaten during the Qingming Festival in my hometown. It is a type of rice ball. After steaming the boiled rice, stir-fried bamboo shoots, preserved vegetables (Meigancai), shredded pork, mushrooms, and Chinese chive leaves are added, then shaped into a ball.

Step 1
Wash the rice clean, put it in the pot with cold water, and stir appropriately while cooking to avoid sticking to the pot.

Cook until the rice grains can be crushed easily.

Remove the rice and drain the rice soup, then steam until cooked and set aside.

Pour a small amount of cooking oil into the pot, add diced fat meat, and stir-fry to render the oil.

After removing the excess oil, add the lean meat and stir-fry until it changes color.

Add dark soy sauce, light soy sauce, oyster sauce, salt, chicken essence, and cooking wine; simmer for a while.

Then add the cut and processed preserved vegetables (Meigancai), mushrooms, carrots, and spring bamboo shoots.

Stir-fry to mix in the flavor, and season appropriately according to taste.

Finally, add the Jiaotou leaves (Chinese chive leaves) and stir-fry evenly.
Step 10
Add the steamed rice.

Mix evenly and turn off the heat.

Shape the mixture into rice balls.
