Vegetarian Steamed Tofu Bun

Ingredients

flour 400g
fermented dough starter 100g
tofu (finely chopped) 400g
rehydrated dried shrimp (finely chopped) 10g
thin sweet potato noodles (softened in hot water then finely chopped) 20g
bok choy (finely chopped) 30g
fine salt 5g
MSG 2g
scallion and ginger (finely chopped) 10g
vegetable oil 20g
edible alkali appropriate amount

Instructions

Knead and ferment dough

Put the flour in a bowl, add the fermented dough starter and an appropriate amount of water, mix well, let ferment, then add edible alkali powder and knead until smooth. Divide into 20 small dough portions, roll each into thin wrappers and set aside.

Prepare filling

Bring water to a boil in a pot, add the noodles and blanch until soft, then chop finely. Finely chop the bok choy, tofu, dried shrimp, scallion and ginger. Add fine salt, MSG and vegetable oil, mix evenly to make the filling.

Wrap and shape

Place the filling inside the dough wrappers, wrap into chrysanthemum shapes, steam in a steamer for 20 minutes until fully cooked.
