Vibrant Stir-Fried Chinese Yam

Story

This dish is as beautiful as it is nutritious. By blanching the yam first, we ensure it retains its texture and vibrant color during the stir-fry process.

Ingredients

Chinese yam (or regular yam) 1 large (approx. 300g)
Dried shiitake mushrooms 5 pieces
Dried wood ear mushrooms 5 pieces
Carrot 1 small
Cooking oil 2 tbsp
Garlic 2 cloves, minced
Salt to taste
Light soy sauce 1 tsp

Prepare the Mushrooms

Soak the shiitake and wood ear mushrooms in warm water until they are completely soft and rehydrated. Trim off the tough stems and slice the mushrooms into thin strips.

Prep the Yam and Carrot

Peel the carrot and cut it into thin slices. Blanch the whole yam in boiling water for 2 minutes. Remove it, let it cool slightly, then peel and cut into diagonal slices. Soak the yam slices in a bowl of lightly salted water to prevent discoloration.

Stir-Fry the Vegetables

Heat oil in a wok or skillet over medium-high heat. Add the minced garlic and stir until fragrant. Toss in the mushrooms, carrots, and drained yam slices. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Season and Serve

Add the salt and soy sauce, tossing everything together to coat evenly. Serve immediately while hot.
