This rustic dish transforms simple pork fat scraps into something extraordinary. The crispy bits add depth while the noodles soak up all the savory broth.

Ingredients

dried glass noodles 100g
pork fat with skin 150g
vegetable oil 2 tablespoons
soy sauce 2 tablespoons
salt to taste
green onions 2 stalks
garlic 2 cloves

Instructions

Prepare the noodles

Soak the glass noodles in warm water for about 20 minutes until softened. Drain and set aside.

Render the pork fat

Cut the pork fat into small pieces. Heat oil in a wok over medium heat and cook the pork fat pieces, stirring occasionally, until they turn golden and crispy. Remove and reserve the cracklings, leaving the oil in the wok.

Aromatics

Add minced garlic to the wok and stir until fragrant, about 30 seconds. Pour in about 4 cups of water and bring to a boil.

Cook the noodles

Add the soaked glass noodles to the boiling broth. Let them simmer for 5-7 minutes until they become translucent and tender. Season with soy sauce and salt.

Stir in the crispy pork fat bits. Sprinkle with chopped green onions and serve hot in deep bowls.
