Water Shield with Pond Fish Slices

Ingredients

Pond goby (cleaned, filleted, skinned, and sliced into thin fillets) 200 g
Cooked ham (shredded) 15 g
Water shield (tender tips, washed) 150 g
Shaoxing wine 15 g
Salt 1.5 g
Scallion (minced) 10 g
MSG 1.2 g
Cooked chicken fat 15 g
Pork broth 250 g

Prepare the fish slices

Clean the pond goby, remove the two side fillets, scrape off the skin, and slice away the pectoral spines to obtain clean fish slices. Rinse, drain, and place in a bowl. Add the Shaoxing wine, salt, and minced scallion, then mix well.

Prepare the water shield

Wash the water shield tender tips, blanch them in boiling water until they turn emerald green, then remove and place in a bowl.

Cook and assemble

Place a pot over heat. Add the pork broth and water, then add the fish slices and salt and bring to a boil. Skim off the foam, then add the Shaoxing wine, shredded ham, and MSG. Pour everything into the bowl with the water shield, drizzle with the cooked chicken fat, and serve.
