These cream-filled croissants are best assembled right before serving to keep the pastry crisp and the cream fresh. Choose ripe, juicy oranges for the best flavor contrast.

Ingredients

heavy whipping cream 1 cup
granulated sugar 2 tablespoons
store-bought croissants 2 large
navel orange 1 medium
vanilla extract 1/2 teaspoon (optional)

Whip the cream

Pour the heavy cream into a cold mixing bowl. Add sugar and vanilla if using. Beat with an electric mixer on medium-high speed until soft peaks form—the cream should hold its shape but still look fluffy. Transfer to a piping bag fitted with a star tip.

Prepare the croissants

Using a sharp serrated knife, carefully slice each croissant lengthwise, creating an opening but not cutting all the way through. The croissant should still hold together like a book.

Fill and garnish

Pipe the whipped cream generously into the opening of each croissant. Peel and segment the orange, then place 2-3 orange segments on top of the cream. Serve immediately for the best texture.
