White Fungus, Peanut and Red Date Soup

Autumn's dry climate makes porridge and soups a great way to hydrate and nourish the body. On a weekend, I prepared a white fungus, peanut, and red date soup—silky white fungus, soft peanuts, sweet red dates, and iron-rich brown sugar. Nutritious and delicious.

peanuts 30g
red dates 4
water to taste
brown sugar 10g

Instructions

Step 1

Ingredients: white fungus, peanuts, red dates, and brown sugar.

Soak the white fungus and peanuts in water ahead of time.

Remove the pits from the red dates and cut them into small pieces.

Add water to a clay pot, then add the white fungus and peanuts. Bring to a boil over high heat, then simmer over low heat.

Once the peanuts are cooked, add the red dates.

Add the brown sugar and cook for 2 minutes until it melts, then turn off the heat.
