A Fujian summer seasonal dish: thinly sliced whelk, briefly oil-blanched, then white-stir-fried with winter bamboo shoots and shiitake mushrooms for a tender, clean flavor.

White Stir-Fried Sea Conch

Ingredients

Sea conch meat (shell removed, tail removed, rubbed with salt to remove slime, washed clean, and sliced thin) 500 g
Winter bamboo shoot slices 75 g
Dried shiitake mushroom slices 4 slices
Scallion segments 45 g
Shaoxing wine 75 g
Salt (part used to rub and wash the conch meat, part used for seasoning the thickening sauce) a pinch
Water chestnut starch (for thickening) a pinch
Clear broth (for thickening) a pinch
Hot lard (for blanching and stir-frying) 30 g

Instructions

Prepare the sea conch

Crack open the conch shell, remove the meat, take off the tail, rub with a little salt to get rid of all the slime, then rinse clean with water and slice into thin pieces—the thinner the better, otherwise it will not turn out tender when stir-fried.

Blanch the conch

Heat a wok over high heat with hot lard (30 g), drop in the conch slices to blanch briefly, then pour them out and drain off the oil.

White stir-fry to finish

Add a little more lard to the wok and heat it up, then add the scallion segments, winter bamboo shoot slices, and dried shiitake slices together and stir-fry briefly. Add salt, Shaoxing wine, water chestnut starch, and clear broth to thicken the sauce, then immediately pour in the blanched conch slices and toss everything together quickly for a few seconds until done.
