Whole Wheat Bread

Made by mixing high-gluten and whole wheat flour, shaped into an olive form with leaf-shaped scores on the surface, then baked.

Whole Wheat Bread

Ingredients

high-gluten flour 400 g
whole wheat flour 100 g
sugar 40 g
salt 10 g
dry yeast 10 g
butter 40 g
egg 50 g
water 250 ml

Make the dough

Please refer to the 'basic dough method' on pages 14-15 to make the dough. Divide the dough into 250 g pieces, then roll out each piece from the center outward with a rolling pin.

Shape

Roll the flattened dough from top to bottom into an oval shape.

Dust with flour

Prepare high-gluten flour, then hold the seam of the dough and roll the dough surface in flour.

Score

Use a small knife to cut leaf-shaped patterns on the dough surface.

Ferment and Bake

Ferment the dough. Before fermentation, the dough is about 16 cm long and 5 cm wide; after fermentation, it is about 19 cm long and 8 cm wide. At this point, it can be placed in the oven to bake.
