Wild West Chili

Ingredients

bacon strips (diced) 2
ground venison or beef 1 pound
chili powder 2 teaspoons
salt 1½ teaspoons
garlic salt ¼ teaspoon
dried oregano ¼ teaspoon
cayenne pepper ⅛ teaspoon
hot pepper sauce 3 to 5 drops
diced tomatoes (undrained) 1 can (14½ ounces)
finely chopped celery, onion and carrots 1 cup each
finely chopped green pepper ½ cup
chili beans (undrained) 1 can (16 ounces)

Instructions

Step 1

In a large saucepan, cook the bacon and venison over medium heat until no longer pink; drain off the fat. Add the seasonings and stir-fry for 5 minutes.

Step 2

Stir in the tomatoes, celery, onion, carrots, and green pepper; bring to a boil. Reduce the heat to low, cover, and simmer for 40 minutes. Stir in the beans and cook for another 30 minutes.
