Wine-Fragrant Sea Snails

Ingredients

Live sea snails (crack shells, remove meat, slice thinly) 8
Bamboo shoot tips (washed and sliced) 50 g
Ham (sliced) 25 g
Red chili pepper (washed and sliced) 2
Scallion (washed and minced) 1
Ginger (washed and minced) 1 small piece
Garlic (washed and minced) 3 cloves
Starch (for thickening) to taste
Cooking oil 30 g
Cooking wine (for soaking snail slices) 1 tbsp
Beer 2 tbsp
Aromatic vinegar 1 tsp
Fine salt 2 tsp

Instructions

1

Prepare the sea snails

Crack the sea snail shells, remove and wash the meat, and slice thinly. Blanch in boiling water until 70–80% cooked, then lift out and soak in cooking wine for a few minutes. Finally, rinse with cold water.

2

Prepare the ingredients

Wash and mince the scallion, ginger, and garlic; wash and slice the red chili pepper; wash and slice the bamboo shoots; slice the ham.

3

Stir-fry

Heat a small amount of oil in a wok, add the scallion and ginger to release their fragrance, then add the bamboo shoot slices, snail slices, red chili pepper slices, and ham slices. Season with salt, beer, and vinegar, and stir-fry evenly.

4

Thicken and serve

Add a small amount of wet starch slurry to thicken, then serve.
