Winter Melon with Mushrooms

Ingredients

Winter melon (peeled, seeds removed, sliced)
Ham (sliced)
Button mushrooms
Dried shrimp 30 g
Lard (used in two batches)
Stock (for steaming and sauce) 8 tbsp
Cooking wine (for deglazing) to taste
Salt 1 tsp
Sugar 1 tsp
MSG 2 tsp
White pepper 1 tsp
Cornstarch (for thickening) to taste
Cooking oil 30 g
Chicken oil (for drizzling) 1 tsp

Instructions

1

Prep and blanch

Peel the winter melon and scoop out the seeds, then slice. Slice the ham. Blanch the winter melon in boiling water until tender, then drain and rinse under cold water.

2

Steam

Arrange the ham and winter melon slices in a bowl, add salt, MSG, lard, and stock, and steam over a steamer until fully cooked. Remove and invert the winter melon onto a serving plate.

3

Make sauce and pour

Heat the remaining lard in a pan until hot. Splash in the cooking wine, then add the stock, mushrooms, and reserved winter melon blanching liquid. Season with sugar, salt, MSG, and white pepper. Bring to a boil, thicken with a cornstarch slurry, drizzle in the chicken oil, and pour the sauce over the layered winter melon to serve.
