Zao Lu Duck Gizzards
Boiled duck gizzards are sliced, then marinated in a chilled fermented rice-wine sauce to absorb the flavors, resulting in a crisp texture and a rich, aromatic finish.

blanching
Clean the duck gizzards. Bring water to a boil in a pot, add the duck gizzards. When white scum floats to the surface, discard the water and rinse the duck gizzards again.
cooking
Add fresh water again, add cinnamon bark, star anise, sliced ginger, Shaoxing wine, Sichuan peppercorns, 1 scallion, and cook together with the duck gizzards for 20 minutes.
slicing
Remove the duck gizzards, let them air dry naturally, then cut into slices.
marinating
Fill a large bowl with zao lu, add sesame oil and chopped scallions. Submerge all the duck gizzard slices in the zao lu, cover the bowl with a plate, place it in the refrigerator and let it sit for one hour before serving.
