Stir-Fried Pork Ribs with Red Wine Lees

Ingredients

Pork spare ribs (cut into strip-shaped pieces) 500g
Red wine lees 75g
Egg whites 2
Chopped scallions A pinch
Garlic (crushed) 5 cloves
Sugar 30g
Salt A pinch
Ling starch 45g
Sesame oil 20g

Instructions

Step 1

Cut the ribs into strip-shaped pieces; mix sugar, salt, and red wine lees in a small bowl, add the ribs and toss to coat, then place them into a batter made from egg whites and ling starch and toss again.

Step 2

Heat lard (500g) in a wok over medium-low heat, add the ribs and fry for about three minutes, then remove and drain off the oil.

Crush the garlic cloves with a knife, stir-fry them in the oil wok until fragrant, then add sesame oil and scallions. Add the ribs back and toss together a few times. Done.
