Zhajiangmian (Chinese Fried Sauce Noodles)

Stir-fry diced pork with yellow soybean paste and seasonings into a rich sauce, then spoon over cooked noodles to serve.

Zhajiangmian (Chinese Fried Sauce Noodles)

Ingredients

noodles (cooked) 250 g
diced pork (for stir-frying) 150 g
yellow soybean paste (for stir-frying) 40 g
chopped scallion (fry until fragrant) to taste
Shaoxing wine to taste
sesame oil (for drizzling) to taste
lard (for stir-frying) to taste
sugar to taste
soy sauce to taste
MSG to taste
clear broth (added while simmering the sauce) a pinch

Make the fried sauce

Heat a wok over high heat. When the oil reaches about 80% hot, add the chopped scallion and fry until fragrant. Add the diced pork and stir-fry briefly, then add the yellow soybean paste and Shaoxing wine. Continue stir-frying until the pork is cooked through. Once the meat and the sauce begin to separate, add the sugar and a small amount of clear broth, and stir-fry for another moment. Add the MSG and drizzle in the sesame oil. The sauce is ready.

Cook the noodles

Bring a pot of water to a rolling boil and cook the noodles. When the noodles are done, transfer them to a large serving bowl and spoon the fried sauce over the top.
