Zuo'an Tofu

Tofu is mashed and combined with chicken, steamed until honeycomb-like pores appear, then sliced, deep-fried, and finished by steaming in chicken broth until tender and flavorful.

Zuo'an Tofu

Ingredients

water tofu (crushed into a pulp, filtered and sifted) to taste
fat chicken breast (minced and added to the tofu) to taste
chicken broth (for steaming) to taste

Instructions

Prepare slurry

Crush the water tofu into a pulp, filter and sift. Take the fat chicken breast, mince it, and mix it into the tofu.

Steaming

Steam as you would for egg custard, until honeycomb-like holes appear.

Cool and slice

Cool after removing from heat, then cut into domino-shaped slices with a knife.

Fry and rest steam

Fry briefly in a pan, then remove and steam in a clay pot with chicken broth until cooked.
