Almond Tofu

A refreshing dessert with a silky-smooth texture, served in a light lemon syrup and garnished with goji berries.

Almond Tofu

Ingredients

milk 200 ml
heavy cream 100 ml
fine granulated sugar 100 g
goji berries (soaked and drained) to taste
gelatin (soaked in cold water) to taste

Instructions

Cook the milk-gelatin liquid

Combine the milk and fine granulated sugar and heat together, then add the gelatin and stir until dissolved. Place Material A in a pot, turn on the heat, and once it comes to a boil, turn off the heat. Add the gelatin, stir until fully dissolved, then remove the pot from the heat.

Mix with almond powder

Combine the heavy cream with the almond powder. Place the almond powder in a bowl, slowly pour in the heavy cream, and whisk continuously until evenly blended.

Combine the mixtures

Pour the mixture into the milk-gelatin liquid and blend together. Pour the mixture in step 2 into the pot from step 1 and mix until uniform.

Strain the mixture

Strain through a sieve. Use a sieve to pass the mixture from step 3 into another bowl so that it becomes silky and smooth.

Chill until set

Cover with plastic wrap and refrigerate until firm. Cover the bowl from step 4 with plastic wrap, then place it in the refrigerator to chill and set.

Prepare the syrup

Make a lemon-flavored sugar syrup. Combine Material B in a pot and turn on the heat. Once it boils and the fine granulated sugar has fully dissolved, remove from the heat. Let the steam dissipate, then chill in the refrigerator.

Spoon into serving dishes

Spoon the set mixture into serving containers. Once the mixture from step 5 has set, use a spoon to casually scoop it into individual serving containers.

Garnish and serve

Pour the syrup over and garnish with a few goji berries. Pour the chilled syrup from step 6 over the portions from step 7, and top with a few drained goji berries.
