Ingredients
Instructions
Step 1
Preheat the oven to 180°C (350°F / gas mark 4). Line 2 large baking sheets with parchment paper.
Step 2
In a bowl, beat the egg whites until stiff peaks form. Add both flours, then the sugar and vanilla extract, and fold gently with a large metal spoon.
Step 3
Spoon half the batter into a plastic bag and push it into one corner. Snip off the tip to make a 1 cm (½ inch) opening.
Step 4
Squeeze the bag and carefully pipe letters about 6 cm (2½ inches) tall onto one baking sheet. Transfer the remaining batter to another bag and continue piping letters onto the second sheet.
Step 5
Bake for 12 minutes, until golden and crisp. Carefully transfer to a wire rack to cool.
Step 6
Break the chocolate into pieces. Melt over a bain-marie (double boiler), stirring frequently.
Step 7
Pour the melted chocolate into a small paper piping bag and snip off the tip. Trace over the letters on the cookies to outline them. Let set for at least 1 hour until hardened.
