Alpine Trout with Butter Sauce

Alpine Trout with Butter Sauce

Ingredients

Alpine trout fillets (cut into 4 oz portions) 3 lb
Salt to taste
Black pepper to taste
Flour 1 cup
Vegetable oil 1/2 cup
Butter 1/2 cup
Lemon juice juice of 2 lemons
Chicken or brown gravy (optional) 1/2 cup

Step 1

Season the trout with salt and pepper; coat with flour. Heat the oil in a pan. Quickly fry the trout in the hot oil until both sides are evenly golden brown. Transfer the trout to a shallow baking dish. Bake at 350°F for 5-10 minutes until the fish flakes easily; keep warm.

Meanwhile, melt the butter in a saucepan until it starts to turn golden. Carefully stir in the lemon juice (the butter will foam). If desired, mix in the gravy. Drizzle the sauce over the fish or serve it on the side.
