American Cheesecake
A classic American-style cheesecake with a cream cheese base, featuring a smooth, creamy texture. Best enjoyed chilled.

Cream cheese (softened at room temperature, cut into chunks)

Biscuits (crushed)

Instructions

Crust base preparation
Mix butter, powdered sugar, and crushed biscuits together, press into the mold flat with a spoon, set aside.

Cheesecake batter preparation
Mix cream cheese, caster sugar, and salt together until smooth.

Add liquid ingredients
Add yogurt and mix well, then add heavy cream and stir until combined.

Add dry ingredients
Add sifted cake flour and cornstarch, mix until no lumps remain.

Add fat and egg white
Add melted butter and mix well, then add egg white and stir to combine.

Bake
Pour the batter into a piping bag, squeeze onto the prepared crust base to 90% full, bake in an oven with upper heat 170°C and lower heat 130°C in a water bath for about 50 minutes.

Chill and demold
Let cool slightly, then refrigerate for 1 hour before demolding.
