Apple Meringue Tarts
Small tarts with a pastry shell filled with cooked apple purée, topped with meringue, and baked.
Ingredients
store-bought puff pastry
7 oz (200g)
apples (peeled and chopped)

water

sugar
1 tbsp (15g)
lemon juice
1 tsp
egg white
1 large
granulated sugar

Step 1
Preheat the oven to 400°F (200°C). Use a 3.5-inch (8.5 cm) cutter to cut 6 rounds from the puff pastry and line them in a muffin tin.

Peel and chop the apples, add water, and cook until soft and the liquid has evaporated. Stir in the sugar and lemon juice.

Let the apples cool slightly, then mash into small chunks. Spoon into the pastry shells and bake in the oven for 15 minutes.

Make the meringue: beat the egg white to stiff peaks. Add 1 tbsp of sugar and beat, then beat in the remaining sugar. Pipe or spoon onto the apples and continue baking for 3-5 minutes.
