Cooking

Use a 23 cm diameter sloped glass baking dish. Coat the dish with oil, then heat on high for 2 minutes. Pour in the egg mixture and heat on high for 30 seconds. When the egg near the edge of the dish starts to expand and set, use a whisk to push the cooked parts toward the center, and push the uncooked parts in the center toward the edge. Continue heating on high for 1 minute. At this point, there should still be a small amount of uncooked egg mixture in the center of the dish; stir it lightly, then let it rest for about 2 minutes until it is fully set.
