Beef Brisket Stew with White Radish
According to the saying, "eat radish in winter and ginger in summer." As the weather turns colder, it's a great time to enjoy warming, nourishing dishes like braised beef brisket with radish.
Ingredients
Instructions
Step 1
Select beef short ribs (the rib portion of the brisket).
Step 2
This cut of brisket produces a better texture when braised.
Step 3
Wash the white radish, large green onion, and ginger and set aside.
Step 4
Star anise. (Generally available at any grocery store; if unsure, ask the shopkeeper to help you put together a mix.)
Step 5
Rinse the trimmed brisket and set it aside.
Step 6
Place large green onion segments and ginger slices into the water.
Step 7
Add the brisket, bring to a rolling boil over high heat, and cook for one to two minutes, then turn off the heat.
Step 8
Remove and rinse off any scum.
Step 9
Heat oil in a pan and stir-fry the brisket. (This gives the finished broth a milky-white color, but it can be skipped.)
Step 10
Add the star anise and stir-fry briefly.
Step 11
Pour in boiling water. (Do not add cold water.)
Step 12
Transfer to a clay pot.
Step 13
Cover, bring to a boil over high heat, then reduce to a gentle simmer and braise for two and a half hours.
Step 14
Prepare the radish, washed and cut into chunks. (Peel if you prefer not to eat the skin.)
Step 15
After the brisket has braised for two and a half hours, add the radish and continue simmering until tender (about half an hour), then season with salt to taste.
Step 16
Ladle out and garnish with cilantro.
Step 17
You can also serve it with your favorite dipping sauce.
