Sichuan pepper water to taste
White pepper powder to taste
Chopped cilantro to taste

Instructions

1

Prepare the filling

Mince the beef into a paste, add the diced pork fat and Sichuan pepper water, and stir in one direction to season. Add the dried shrimp, oyster sauce, minced ginger, raw oil, sesame oil, fine salt, and MSG, then continue stirring in one direction until a paste-like filling forms.

2

Wrap the wontons

Take a wonton wrapper, place a spoonful of filling in the center with a spoon, and fold it into a raw wonton.

3

Prepare the broth

In a pot, bring the beef bone broth to a boil, then season with white pepper powder, chopped cilantro, minced carrot, fine salt, MSG, and sesame oil.

4

Cook the wontons

In a separate pot, bring water to a boil, add the raw wontons, and gently stir along the bottom in one direction with a spatula. When the wontons float to the surface and there are no more white bubbles around them, they are done. Use a slotted spoon to transfer them into bowls, ladle the seasoned broth over them, and serve.
